The philosophy is to use simple, good, natural ingredients and as regional and seasonal as possible.
An old house, a donkey named Olivia and excellent olive oil...
…these are the ingredients and events that came together in 1998 when Rainer Jörg decided to buy a house in need of renovation with an italian restaurant in it in his home village Wertach.
Shortly thereafter, the prototype of the mediterranean transport, donkey lady Olivia, found a new home with him.
The current pizza maker was also looking for a new home, so it was time for the electrician and entrepreneur Jörg to deal with the italian cuisine and the best ingredients for it.
What would the italian cuisine be without olives and olive oil?
High-quality olive oil has many positive effects on the human organism and is just good for us. For example the phytochemicals in the oil help to capture and neutralize free radicals in the body, which cause skin aging.
It also improves blood flow within the vessels, which has a positive effect on cardiovascular diseases. No good Italian cuisine would be without nature's liquid gold.
Even if Rainer Jörg can not grow the olives by himself in the Allgäu – the idea of good italian cuisine „Beim Olivenbauer“ was born.
You can also find dishes from the bavarian kitchen as well as vegetarian and vegan dishes.

All our organic beef for the ready-to-cook dishes come from the organic farm Sträßle in Köpfingen. Four organic cattle were bought by us, slaughtered, butchered, prepared and packaged ourselves.

Worth knowing and special features
The beans are gently and carefully roasted in the traditional drum roasting process for our „Allgäuer Kaffee“. This is the only way to unfold the optimal aroma of our alpine coffee.
Many of our dishes are made using the sous-vide method. Sous vide describes the method of cooking meat, fish or vegetables at low temperatures less than 100 °C.
We have our own microbrewery and brew handmade bavarian beer. They are unfiltrated, thats the only way how all the good ingredients stay in the beer.
Salt to season the dishes
In the kitchen we only use natural, untreated salt (not refined) and sea salt for seasoning on the tables.
Our tomato soup and sauces are homemade from real Italian "Mutti" tomatoes.
Spices and herbs
Only herbs and spices are used in the making and refinement of our dishes. No flavour enhancers or artificial aromas.
Kitchen without microwave
Enjoy high quality food that is not exposed to microwave treatment, only cooked gently.
Our spaetzle, burger buns and pizza are only made from 100% spelt flour.
